Fried Apples with Bacon and Onions…

Fried Apples with Bacon and Onions.
Start with a cast iron pan that you bought for $20, or whatever pan you have, and fry up four slices of bacon or so, roughly chopped.
Fry until crisp and set aside, keeping the fat in the pan.
Add four coarsely chopped apples and one onion.
Fry, stirring occasionally, until soft and starting to crisp. A pinch of sage won’t hurt anything either…
Stir bacon back in and serve alongside this chicken, and roasted acorn squash, well buttered, and drizzled with maple syrup.
